1 (15.5-ounce) can chickpeas, drained and rinsed
1/4 cup Just Mayo
1 tablespoon Dijon mustard
1 1/2 tablespoons apple cider vinegar
1/4 cup diced red onion
Pinch cayenne pepper, optional
Freshly ground black pepper
Here are 4 easy steps to make Chickpea “Tuna” Salad Sandwiches:
- Drain liquid from Chickpeas
- Place chickpeas in the bowl of a food processor
(blenders will work fine) and pulse two or three times to roughly chop.
- Add remaining ingredients and pulse two or three times more to incorporate.
- Add to your sandwich or wrap with lettuce and tomato
