tuna sand

(Makes 2 to 4 sandwiches)


1 (15.5-ounce) can chickpeas, drained and rinsed
1/4 cup Just Mayo
1 tablespoon Dijon mustard
1 1/2 tablespoons apple cider vinegar
1/4 cup diced red onion
Pinch cayenne pepper, optional
Freshly ground black pepper

Here are 4 easy steps to make Chickpea “Tuna” Salad Sandwiches:

  1. Drain liquid from Chickpeas
  2. Place chickpeas in the bowl of a food processor

(blenders will work fine) and pulse two or three times to roughly chop.

  1. Add remaining ingredients and pulse two or three times more to incorporate.
  2. Add to your sandwich or wrap with lettuce and tomato
