1-2 Large Zucchini

Avocado oil

Garlic and Herb seasoning

Salt & Pepper to taste

  1. Use a potato peeler and try to make the pieces as thin as possible and slice the thick ones in half or as thin as desired.

  2. Bring avocado oil to low heat and add zucchini noodles

  3. Add garlic and herb seasoning (about 1 teaspoon) and pink Himalayan salt (about a ½ tea spoon)

  4. Stir and cook until noodles have softened turn off heat Take 5 basil leaves and slice into small slices and mix into the warm noodles (no need to cook with the basil the heat of the noodles will soften the basil)

  5. Place noodles on a plate

  6. Option to mix 1 table spoon of nutritional yeast to cashew cheese for a more cheesy taste

  7. Add two tablespoons of cashew cheese and garnish with basil leaves on top

Cashew Cheese (sauce):

1 Cup of Cashews
2 teaspoons of lemon juice
1/2 teaspoon of pink Himalayan salt
Pepper to taste
(Pro tip: 1/2 teaspoon of garlic powder)
1/4 cup of water or nut milk of your choice
1. Soak cashews for a minimum of one hour or up to 24 hours (the longer they soak the creamier it gets)
2. Drain water and add cashews, lemon juice, salt, and pepper
3. Blend for 1 min
4. Add 1/4 cup of water or I used almond milk and blend for 2-4 minutes
5. Ready to eat or place in the fridge for a little to have cold 😍
