Day 4 of No Refined Sugar no soy vegan challenge: eating healthy is not about being skinny its about being grateful to be here in this physical dimension. This Challenge has given me so much awareness of what is going in my body. If you want to be happier, healthier, have more energy, sleep better, and probably a thousand other bonuses you should try switching up your diet.
When we eat fruit on an empty stomach our body better receives all its nutrients and vitamins, however when we eat fruit on an empty stomach especially if you still consume animal products we don’t get all the minerals and beneficial compounds because the fruit starts to decompose in the time it takes the body to break down that the other ‘food’.
Life doesn’t always have to be complicated just like my mushroom soup, its straight to the point, doesn’t take much time to make, and is out of this world delicious.
Mushroom Herb Soup
Portobello & Oyster Mushrooms
a couple shakes of dried Parsley, Oregano, thyme
2 Garlic cloves
1/2 Veg Broth 1/2 water
1 whole white/yellow onion
5 fingerling red potatoes
Liquid Aminos about 5 table spoons or to taste
Dice onion and place in a pot with the lid on for about a minute or so to build as much flavor as possible dice garlic and add to onions with liquid aminos, and a little veggie broth just enough to make sure the onions don’t burn and cover with the lid. While that cooks dice all the mushrooms and add to the pot and just enough water to make the mushrooms float a little keep adding herbs, liquid aminos, and black pepper to taste.
1 can of black beans, kidney beans, & pinto beans
mushrooms, 1 onion, cumin, cayenne, turmeric, paprika, & red pepper (if you like it hot)
Top with cashew cheese (recipe HERE) & avocado
Place onions into a big pot with a 1/4 teaspoon avocado oil or olive oil place lid on top and let it sweat then add mushrooms beans and keep adding spices (mostly cumin) until its the right flavor of your liking. The longer chilli sits the more flavorful it is so leftovers are amazing too.
